I'm tossing around the idea of building my own as a winter project.

Lets say for the sake of simplicity I want to keep the rollers fixed instead of adjustable. What would be the optimum distance between the rollers for a decent crush?

My mill gap is set at .035" for all grain types.

While a fixed crush will be simpler to build, an adjusting mill will be far more useful. The worst would be building the thing and then finding out that it crushed too finely, or too coarsely to be useful. Then you will be standing there wishing you could tweak it just a little bit.
