I am making coopers mexican cerveza. I am using Muntons malt extract. I want to know how much to use and can I use it without adding sugar
 
Hi, I am very new to this, but am about to brew a similar beer to you (mine is Coopers European Lager).

I believe both our kits recommend Coopers Brew Enhancer #2 (check your instructions), which contains the sugars:


  • 500g Dextrose - 100% fermentable by the yeast into alcohol/CO2 - cleanly with minimal residual.
  • 250g Maltodextrin - Not fermentable - for adding body/mouthfeel to the result
  • 250g Light Malt Extract - not 100% fermentable - results in some alcohol/CO2, but also leaves some residue for flavour.

I have no idea how much the above ratios can, or should, be adjusted for these kits.

TL; DR as I understand it, more dextrose = higher alcohol content, more Malt Extract = more taste but lower alcohol.
