Dears brewer,

I will make beer tomorrow with:

Malt Extract hopped lightMalt 3.3 lb
And 1 kg brown Sugar
US-05 yeast

Unfortunately I don’t have DM extract
I don’t want to heart the body of beer or head


What is your recommendation for:

Letters of water to get 5% alcohol or more.

Note : I don’t have hydrometer

or if there is recipe for follow with what I have

You say you don't have DM extract. Were you supposed to add another 2 or 3 pounds of the DME? I'd say if you only have 3.3 pounds of hopped LME, you should only brew around 2.5 or 3 gallons to the fermenter. Making up the difference with sugar wouldn't be a good idea. I wouldn't use sugar for over about 15% of the fermentables. But if you have a 6.5 gallon fermenter, that would be a lot of headspace. It might be ok, but could have oxidation issues. Is it possible to get the extra DME that you need?

Bitterness would be another issue. I haven't used that hopped extract - don't know how much bitterness it provides. Adding straight DME would affect the bitterness balance, but it might be intended for use that way.

I don't know if I'm helping since there are unknowns here. It might help to know exactly what the original instructions and recipe called for.

ncbrewer is correct. Use 2.5 gallons (9.5L) of water. Distilled water, if you can get it. Don't use the sugar, because if you do the beer will finish very dry, like champagne. You want it to be maltier.
