I've got some leftover ingredients and I need to get rid of them. I figured that since stouts are pretty forgiving as a whole, then there's no reason I shouldn't just use what I've got to make one. Suggestions and advice would be appreciated. This will just be a miniature batch ~9.5 liters
Predicted OG is 1.074, with about 74 IBUs.

Here's the current recipe idea:
Grain Bill:
953.00 g Pale Malt (2 Row) Bel (3.0 SRM) 33.4 %
810.44 g Rye Malt (4.7 SRM) 28.4 %
470.68 g Oats, Flaked (1.0 SRM) 16.5 %
249.45 g Caramel/Crystal Malt - 40L (40.0 SRM) 8.7 %
124.88 g Chocolate Malt (350.0 SRM) 4.4 %
124.88 g Roasted Barley (300.0 SRM) 4.4 %
62.29 g Black (Patent) Malt (500.0 SRM) 2.2 %
58.65 g Barley, Flaked (1.7 SRM) 2.1 %

Hops
28.00 g Northern Brewer [8.50 %] - First Wort 60.0 min
28.00 g Cascade [5.50 %] - Boil 15.0 min Hop

I've also got about 300g of Special B lying around, but I'm a bit burnt on the taste it gives after having a brew go badly that used it. I've also got about 14g of Wai-iti, which seems out of place in a stout, but hell, I guess I could dry hop it to have a ghost of a lime scent?

I think the grain bill looks very nice indeed. I wouldn't change a thing there. You have 11% roasted malts and 8.7% crystal, a good balance, plus a hearty dose of flaked grains for mouthfeel (and oats add their own aroma). You're clearly going for a solid rye character, which I've never had in a stout, but I'll bet it will be interesting.

The only thing I'd change would be to mellow out on the IBU. I'd keep the BU/GU ratio below 0.7, or < 50 IBU. I'm not a fan of roasty and bitter beers. But that's me... not you.

Same here, looks solid but I would also lower the ibus. 30-40 sounds nice to me, but I would prefer 30.

I also would not do a 15min addition, just 60 for bittering, the malt brings the flavour in this one imo.

Okay, cutting the Cascade seems reasonable, so I'll axe that. I'm considering throwing in a bit of oak smoked wheat in place of the barley, because I've been wanting something with a little bit of smoke in it. Maybe push it up to 100 grams.

That is one thing I also want to try in the future. I am just not sure about your quantity. Depends on how heavily the grains have been smoked. The one I got here is recommended between 20 and 100% of the gain bill, so you might be a bit low.

Edit: sorry, did not see that you are doing a small batch, 100g seems reasonable for your batch size!
