I went through my grain and hops today and I have a wide variety that I should get to using soon.

In writing up my current inventory I thought this would be a good spot to post what I have in hopes the community can create a awesome recipe from what I have on hand.

I can pick up any yeast needed, I am not looking to brew a lager yet this season though.

As many or few items as you think---

40 lb - 2-Row Pale
3.5 lb - White Wheat
1 lb Carafa III
12 oz - C20
11 oz - Chocolate
9 ox - Aromatic
8 oz - Caramunich
8 oz British Roasted Black Barley
7 oz - Gambrius Honey
6 oz - Carapils
8 oz - Special Roast
4 oz - C40
4 oz - Biscuit

Hops:

3 oz - Citra
2 oz - Tettnang
2 oz - Northern Brewer
2 oz - Motueka NZ
2 oz - Sorachi Ace
1 oz - Chinook
1 oz - Cascade
1 oz - Fuggles
1 oz - Styrian Goldings
1 oz - Columbus
 
Looks like you could go in a lot of directions there - pale ale, IPA, black IPA, brown, stout/porter, blonde, california common... Question is what do you feel like brewing?
 
I might do something like this for an American pale. I like to mix my late additions but you could change that around and do fewer whole ounce additions if you prefer. This is for 75% efficiency 5 gal, so adjust up and down accordingly. Also you may need to adjust your bittering for the actual AA of your hops and your preference. In Beersmith I get 1.050, 44 IBU, color 7.9 SRM:

8 lbs 2 Row 86.5 %
8.0 oz Caramel Malt - 20L 5.4 %
8.0 oz Caramunich 5.4 %
4.0 oz Biscuit Malt 2.7 %

0.50 oz Columbus (Tomahawk) [14.30 %] - Boil 60
0.50 oz Cascade [6.70 %] - Boil 10.0 min
0.50 oz Chinook [11.10 %] - Boil 10.0 min
0.50 oz Cascade [6.70 %] - Boil 0.0 min
0.50 oz Citra [13.40 %] - Boil 0.0 min
1.00 oz Citra [13.40 %] - Dry Hop 5.0 Days
0.50 oz Cascade [6.70 %] - Dry Hop 5.0 Days
0.50 oz Chinook [11.10 %] - Dry Hop 5.0 Days

Edit: oops, have you using 1.5 oz cascade there. So you'd need to sub something else in for one of those additions, or drop down on the dry hop.
 
With 40lb of two row, lots of specialty grains and hops you could easily do two recipes. Maybe a Pale Ale as suggested and then something darker. With the Chocolate, Roast Barley, etc, you could do a Porter.
 
Thanks very much. I'll be brewing it tonight. What method do you use for dry hopping? Straight in the carboy- or any sort of bag? I've found those first couple beers out of the tend to be rather sedimenty for the 12 I bottle before kegging.
