I usually use BRY-97 for pales pretty much, if I'm using dried yeast. I'm giving M36 Liberty Bell a go after a long absence and noticed it's still thinking about things the better part of a day later. Perhaps I'm used to liquid yeast kicking off. For those with experience with this yeast specifically, how have you found it in terms of lag? Pitched plenty, didn't rehydrate, which is a valid choice these days, nor oxygenate (ditto). The wort is for a pale, 1.045, nothing too special.

While I have M36 users, if you don't mind, tell me why you use it over other dried yeast.
