I just made an all Grain Dunkel Weisen. My target gravity was 1.049, but I ended up about a point lower at 1.039 to 1.04. Here is the recipe and process I used.
The ingedients were from a Northern Brewer Kit:
I am using a 10 gallon Gott cooler with a 20 inch screen (from a toilet supply line) for my filter.
Everything in my process seemed to go smoothly. I was just very disappointed when I read my gravity before adding the yeast.
Any idea where I went wrong? Thanks for any assistance.

- 5 lbs Durst Wheat
- 3.5 lbs Durst Pilsen
- 1 lb Durst Dark Munich 40 EBC
- .5 lb Durst Medium Crystal
- .25 lb Dingemans Special B
- 1 oz. Halletaur (60 min)
- Wyeast German Wheat Yeast
- 3.5 Gallons of mash water....mash held in mid 150 degree range for 60 minutes
- 4.75 Gallons of Sparge water at 170 Degrees
