Low OG on Dark Wheat All Grain

I just made an all Grain Dunkel Weisen. My target gravity was 1.049, but I ended up about a point lower at 1.039 to 1.04. Here is the recipe and process I used.

The ingedients were from a Northern Brewer Kit:

  • 5 lbs Durst Wheat
  • 3.5 lbs Durst Pilsen
  • 1 lb Durst Dark Munich 40 EBC
  • .5 lb Durst Medium Crystal
  • .25 lb Dingemans Special B
  • 1 oz. Halletaur (60 min)
  • Wyeast German Wheat Yeast
I used the infusion mash guidelines from "Beer Captured" by the Szamatulsiks.
  • 3.5 Gallons of mash water....mash held in mid 150 degree range for 60 minutes
  • 4.75 Gallons of Sparge water at 170 Degrees

I am using a 10 gallon Gott cooler with a 20 inch screen (from a toilet supply line) for my filter.

Everything in my process seemed to go smoothly. I was just very disappointed when I read my gravity before adding the yeast.

Any idea where I went wrong? Thanks for any assistance.
 
what kind of effeciency have you been getting from your set-up?
i know mine isn't great so i always add and extra pound or 2 of grains to make up for it.
