Hi,

Thanks for the replies. I am at the last stage and I believed that i did pretty good for the first batch. I had the 1.062 OG (suppose to be 1.065) which is so close but I measured FG today, after 2 weeks, and it was 1.007 (suppose to be 1.012) so where is the problem? What did I do wrong? Any suggestions?

Have you calibrated your hydrometer in distilled water for 60° or 68°? Calibration temperature is printed on the card inside the hydrometer.
It could be reading low.

There probably isn't any problem. FG is a projection, typically based of average attenuation of the recommended yeast. If you use a different yeast or the yeast you used went to the high side of attenutation range then you get lower FG.

That said, that's like 88%. Pretty high, but I don't think the difference is worth a huge process review.

Hi Erol, my other question would be, what was your mash temp? Is your thermometer properly calibrated?

That's a pretty small difference. If you didn't correct for temperature, that could bring you a point or two closer. But I wouldn't worry about being off by .005, especially if it's .005 below the target FG. That's just free alcohol!
 
sounds like your yeast did an excellent job! as others have said it doesn't really sound like a problem (unless you wanted a beer with lots of body).
