Lots of ingredients! Must Brew! Recipe help?

Ok, so I got a little too excited about my new brewing setup and bought a crap load of ingredients. I have two brew kits under my belt which I'm about to transfer to secondary.

I'm mainly worried about the crushed grains I received yesterday. I've heard that I must use them quick. I can probably get 3-4 batches into the pipeline in the next 2 weeks, but I need help with recipes to fit my ingredients. I kinda wanted one to be a choc/oatmeal stout.

Here are my ingredients:

16# Extra Light DME
2# Amber DME
4# Ultra light LME

2# Chocolate Malt (crushed)
2# Roast Barley (crushed)
10# Carmel Malt 60 (crushed)

6 oz. Fuggle
6 oz. Willamette
6 oz. Cascade
4 oz. Summit
4 oz. Liberty

1# Flaked Oats
1# Malto-Dextrin
1 oz. Irish Moss
Plenty of Cocoa powder

4 pkgs safale 04
4 pkgs safale 05
2 pkgs Nottingham


Any help would be GREATLY appreciated. In fact, if you're ever in the San Luis Obispo area I'll buy you a beer or give you one from one of the recipes!:mug:

4# ultra light lme
2# carmel 60
1# oat
1# chocolate

3 oz fuggles

notty yeast

No, it isn't. You need base malt to mash.

FYI, to the OP, flaked grains need to be converted. None of the items you listed has any diastatic power.

EDIT: How about a porter?

That sounds like a plan. I'll probably brew it up tomorrow or Sunday. I'll definitely let you know how it turns out. Definitely let me know if you want to take me up on the free beer! I appreciate the help.

I kinda just pulled that outta my butt! Now that I think about it, you probably won't want to open more bags of hops than necessary. You might go with Willamette all the way through.

Gotta go with 944 here.
Use the Willamette and save the High AA stuff for the IPA you'll want to brew later :)
Willamette would be good in a porter. They impart some noble character - always welcome in that style of brew.
 
100% Willamette porter comin' up! Any ideas on that IPA? Cascade? Mmmmm.... :D
 
If I had Summit Hops, I'd whack an IPA hard at the start.
Blast Amarillo or Cascades at 30. 15. 5 and flameout.

But, I am evil and must be destroyed.

OK, I'm liking the idea. Summit/Cascade IPA for the second batch.

I'll mess around with Beersmith to get the correct bitterness for the style.

Would it be a big issue if I added 2 more pounds of DME to this recipe?
 
It would become a robust porter. You'd want more hops to match. Maybe a bit more chocolate too.

Mmm, porter. The only porter I've met that I didn't like is Baltika #6.
 
ok, I'm mid boil (30 min) add some hops or too late? I'm assuming it's bittering hops that are important, so I won't add more hops at this point unless I get the go ahead....

Just realized you were probably talking about Willamete! Oops... hmmm... was Baltika #6 really hoppy? lol.
 
Baltika just tastes like antifreeze and roasted plastic.:p

It's probably going to go a bit over the IBU guidelines, but I brewed a 1.042 porter with 46 (!!) IBU and it was one of my favorite beers ever.
 
Oh, you weren't drinking Baltika, that was Natural Ice! Damn, how do they get that antifreeze/garlic combo? Battery acid infusion in the secondary?

Well bud, you're welcome to as much as you can drink of this brew. It has just been racked into the primary. In a couple months we'll see how it turns out.

Again, I appreciate the help! I'll upload a pic tomorrow.

Now onto an IPA and a session beer.........
