So I have brewed my own version of Great Lakes Chillwave DIPA two times now. First time used us-05 and this time used wlp001. Both times the beer has turned out great (obviously the latter is a little tastier and cleaner with the liquid yeast) but with the same issue: my beautiful clarity is ruined by yeast that flocculates but does not stick to the bottom, even when cold. So when I pour out of the bottles I cannot keep the yeast in the bottle. This has not happened with any other beer I have made and I couldn't find a related thread on here. Does anyone have any knowledge as to why yeast may do this? Can adding priming yeast at bottling fix this issue?
 
so, your having issues with the sediment that is in your bottles during conditioning. It wont stick to the bottle of the bottle?? IMO there is nothing wrong going on here. It might be on how your bottle is being handled. I can say invest in kegging and you wont have this issue.
 
I have the same problem, or results, with different yeasts I use. WY 1084 sticks in my stouts. WY 1056 and WY 3711 will come out of the bottle even with the most careful pour. I like the taste of the 3711 in my saison so that one is not a problem.

How tight the yeast sticks may just depend on how flocculant the yeast is.
