For many years I have been using a Thermoworks meat thermometer with a waterproofed probe to monitor the mash temps. I'd like to upgrade to full wireless. Is there a waterproof wireless thermometer with a floating probe I could place in the mash up to boil temps?
 
The least accurate way to track mash temperature is to float the thermometer at the top.
The only reason there are "floating thermometers" is you can't read those if they don't float, but that's not a sound reason to follow suit as they are notoriously wrong wrt overall mash temperature unless one is recirculating - and then they'll likely read higher than the middle-to-bottom of the mash.

Which brings the next point: there are very few legitimately "water proof" temperature sensors, especially in the "wireless BBQ thermometer" world. Which is why most folks going electronic use through-wall fittings so only the business end of the sensor is exposed to liquids...

I built a DIY BrewPiLess OLED display with one of thorracks PCB and plan on using it to read the mash temp. I'm going to use a small solar panel to power up the ESP8266. I haven't used it yet but will on my next brew. Still trying to figure out how to build a cheap thermowell for the dsi8b20
 
I got a suitable, bare thermowell tube for ds18b20 use from @Bobby_M for what I considered reasonable $$ - it was the longest one he sells as I needed it for a 6.5g carboy, and the ID was dead-on for the sensor. He also sells kits with bulkhead fittings and I'm sure he'd cut whatever length tube you desire...

I took a standard meat thermometer wired probe and waterproofed it with a couple feet of aquarium tubing and some heat shrink tubing. Worked like charm for many many batches. Still using it today.

I understand your comments on thru wall tstats. In fact my boilermaker came with a large dial through wall tstat. I have never installed it because i fear I'll snag the grain bag. I have enough trouble with the dip tube!!!
 
I just bought a Bluetooth wireless probe for my mash tun. I’m either going to vacuum seal it in a bag and toss it in or toss it in a mesh bag on string so she doesn’t get lost
