Hey Folks I have failed in record keeping and lost a great recipe I found on here. It was as the title says an Wit with Orange Zest and Coriander in it. I don't remember the poster but they had a good collection of recipes

Grain bill included Flaked Wheat, 2-Row Pale, and white wheat malt. I think they used sterling hops but not for sure.

If anyone remembers this brew or something close to it that would be fantastic. Thanks for any help.

From page two of the thread. I kicked ten gallons of this beer for my wedding recently, it's great stuff.

Biermunchers recipes are great!

I've had judges sample my wits before (in casual company) and even though they still tasted great after several months, they were crystal clear and that can detract from the whole "wit" experience. The flour addition is something I heard on Jamil's show.

As far as a recipe:
(For 11 gallons)
8# 2-row
9# Flaked Wheat
2# White Wheat Malt

1.25 ounces of Sterlnig Hops at 60 minutes (I just use whatever clean bittering hop I can find since it plays such a minimal role)

6-7 ounces fresh orange zest - 10 minutes
2 ounces of freshly crushed (pulverized) coriander - 10 minutes
1-2 Tbsp of crushed black pepper - 10 minutes
4 chamomile tea bags - 10 minutes

OG - 1.048
IBU - Somewhere around 17-18

I poured the spice mixes into the hop bag with 10-15 minutes left in the boil. Then I tied off that bag and let it sink to the bottom of the kettle as I cooled the wort. I wanted to let those spices (and hops) steep for the extra 15 minutes.

I pitched a simple slurry of Safale-05 from a prior batch when the wort hit 76 degrees. A bit warmer than usual, but the higher temp will add some slight esters I want.
 
Biermuncher's is great, but not quite your description. EKG hops, and all flaked wheat instead of the white. Although, I regularly make it with some flaked and some white and it turns out pretty tasty. I think once you have the general recipe down, you can make small changes and be good to go. Generally, an oz of bitter orange peel and an oz of crushed coriander will get you there. An oz or less of a low AA bittering addition is a good place to start. Go with at least 50% base malt 2 row and adjust your grain weight to your desired ABV (assuming your usual efficiency).

I think it's more fun to stray from the recipe anyways though!

Word, it went over really well to a diverse group at a wedding. The beer guys liked it and eventhe cocktail fans went back for another glass instead of their usual tipples.
 
Good to know. I thought it would go over well. It has to feel good to have some random guy post a few ingredients of your recipe and many others to be able to pick it out. Thanks again to you guys and hats off to BierMuncher(Though he will probably never see this).
