I picked up some grain/hops for this weekend. This is what I'm working with for 5.5 gallons:

10lbs avangard Pilsner malt
.5lb Swaen melany malt
.25 acid malt

1oz CZ Premiant 10% AA
2oz CZ Saaz 3% AA

Big pitch of wyeast bohemian lager 2124


I also have some magnum hops. Wondering about the best hop schedule & pitching temp. I've made a few lagers before but I'm always guessing about the best way to use hops with lagers. Looking for something easy drinking.
 
It looks like you have all the right ingredients for a good czech lager. For the hops I'd do something like this:

.25oz Premiant @ 60
1oz Saaz @ 30
.25oz Premiant @ 30
1oz Saaz @ 15
.5oz Premiant @ 15

That yields about 36 IBU, which should be a nice balance

For the yeast I usually do a quick lager method, loosely guided around the Brulosophy article: http://brulosophy.com/methods/lager-method/

I cool the wort to 50F and then pitch the yeast, with the regulator set to 50-52F. I'll leave it alone for 2-3 days, then bump it up to 55F. After 2-3 more days I'll bump to 60F, then 2-3 more days to 65F. At this point I'll taste it and test the FG. If everything is good I'll cold crash it. This method relies on you pitching enough yeast though. Otherwise everything will take longer
