Ayyyy!

I'm pretty new to the brewing world and I have a pretty specific taste profile I like in beer.

I like funky smelling, slightly tart farmhouse ales.

I got some sour beer experiments going on but they are gonna take time. In the meantime, I'm looking for yeast that can give me that flavor profile I'm looking for. I've used Wyeast Farmhouse Ale 3726, and I loved that ****. Two weeks fermenting and two weeks in the bottle and I've got something that I know is as close as I'll get to what I love without spending the time ageing. I don't want to get stuck just using the same kind of yeast all the time though so I was wondering if anyone else that had experience with multiple yeasts had suggestions for some different yeasts that produce similar flavors.
 
You've already been to the Mixed Fermentation forum - go back there and check out the Modern Fast Sour sticky thread. You can achieve something sour and funky within weeks, or in some cases, days.

I like my farmhouse sours too, and S-04 ain't gonna scratch that itch. There's lots of evidence that the Kveik strains finish at low pH.

Still, you should look into fast sours.

Citrus from Imperial is supposedly the same strain. I don't know about others, but I sometimes find it easier to source Imperial than White Labs, though apparently my most "L" LHBS shuttered its doors this past week, so neither is going to be easy anymore.

Imperial is really good yeast . I've tried the Darkness and Flagship . Great stuff . My LHBS is still open thankfully. They just limit how many people can come in and they're only doing orders for pick up . Just email or text and your order is bagged when you get there.
 
Thank you for the tips everyone! The fast sour thread is definitely up my alley! And I'll check out those other yeasts as well! Having some choices is prime for me since I've got a homebrew store that keeps a good stock but it seems like a rotating stock the inventory of yeast is always changing.
 
Hahahaha I totally just noticed that the post edited my use of the s word to poopy. I'll be sure to use more of a gentleman's tongue in future posts.
 
Are you in to hefeweizens? WY3068 might be worth a go. It's definitely tart (not sour).
I liked the one I've had but honestly I haven't had that many. Does the yeast ferment similar to an ale yeast? My set up has some limitations, I'm pretty limited to yeasts that ferment at room temp or warmer.
 
I'd reckon that a case could be made for essentially any first generation dry yeast being somewhat tart. This characteristic vanishes with re-use.
