I'm trying to get how that is any different than a fermenter with 1 gallon additional head space.

I have a 6 gallon better bottle that had 5 gallons of beer in it AND I used fermcap-s and it still blew out thru the airlock. I fashioned a blow off tube and it traveled thru the tube as well. It stopped short of actually making me lose any volume of beer, but it does happen to people. I've also seen photos of 7 gallon buckets with only 5 gallons of beer in it that not only blew the bucket lid right off, but also had a krausen extending 2 or 3 inches above the top of the bucket. If you included the headspace in the bucket that's somewhere around 7-8 inch tall krausen! A containment vessel like the one in the link has a hose that goes back down into the liquid to drain it back in. This way it basically just keeps circulating back. Then when vigorous activity stops it drains back in and no more problems. The best part.... no beer is lost!

It's not, but it is a bit of insurance if you want to ferment with smaller carboys or for harvesting yeast. I use 6 gallon better bottles and as long as I keep my beer temps under control 62-68, I rarely seem to need one.

BTW, the vessel he made in the video is called a Burton Union. They've used them in commercial breweries in the UK for years and BYO wrote an article on how to make one in 2006. I built one but haven't had a need to use it.
