is the the complete mini connector set (including female panel portion) or just the male plug on the thing?

This was just for for the male plug, but...

I can throw in a female mini type K panel jack for $2

Does the mini connector plug in to say a multimeter that is compatible with a type-k temp probe, or is it for something smaller?

That connector is the industry standard for K-type thermocouples. If you've got a device that accepts a plug-in K-type, that's almost certainly the right plug on his probe.

the connector is a type k miniature (pretty standard)

the jack you plug in looks like this:

I can supply a panel jack for a few bucks more if you need one.

Also, know that the miniature type k connector is flat bladed. Who knows what your multimeter connection is. There a few different connectors. They are cheap and easy to put on though.
