Brewers,

I mostly brew extract or mini mash kits. I would like to purchase 3 or 4 kits in my next order. If I put the LME in the fridge, how long will it stay fresh.

From that thread about Austin Homebrew kits:

Pour enough vodka on the surface of the extract to cover it. Then pour it off before you use it. Keep it in the fridge. The potential problem is surface mold.

He also noted to try to use fresh extract in the first month. I've only used fresh extract once and it was right away. Otherwise I use the canned LME, but prefer DME and use it more often.
 
Because liquid malt extract is very perishable, it is prone to surface mold. Storing in the fridge will slow down the process. Just treat it like a block of cheese. You wouldn't leave cheese on the counter or out in the garage for a length of time. Just like cheese, even if you put it in the fridge it will still eventually grow mold. We sell over 2 tons of liquid malt extract a week, so we send the freshest extract possible.

I bought an ingredient kit on Friday to brew Saturday. The next day when I went to add it to the kettle, I found the extract to have a half inch thick layer of mold. Any guess how long it sat on a shelf in the homebrew store to have so much growth?
 
My LHBS stores LME in plastic drums at room temperature. How long does it stay good in those drums? And other than mold, how exactly does it 'go bad'?
