Installing a large (8.5 ft) custom stainless hood vent over my 15 g Spike+ Brew System. Without it in place and functioning, I'm in the dark as to what typical operating temps will be in the hood, but I have to believe they'll be well south of 200 degrees with a 700 CFM fan. I'd really like to install lighting inside the hood. Can anyone recommend lighting that can withstand increased heat and humidity? Pics are very welcome. Thanks!

Maybe something like this? I used something like these for my under cabinet lights in my kitchen, have been working for 3 years without issues at this point. Your use case will be wetter and hotter than mine, but I suspect they would work fine.
