New to brewing cider...I picked up 5 gallons of cider from a local orchard tossed in some sugar and some champagne yeast and let 'er rip. Its been close to a month and from what i've read it should be more than done. I made a noobie mistake and never took a starting gravity so I have no idea where its at. However I would think after a month it would begin to settle a bit? Should I wait longer? Or is it good as is? It has the color of an unfiltered belgian. Oh and I'm looking for a sweet finished product, not necessarily dry.
