At what point is it good to start ramping the temperature up? With my Saisons I do it within a couple days but have not done a Wit yet. So far my schedule has been this:

Pitched at 66F let free rise to 68F and sit for 2 days.
48 hours from pitch, free rise to 69F
72 hours from pitch, free rise to 70F

I'm on day 5 from pitching now, would this be a good time to let it rise to 72-74F the top of the temperature band for this strain, or too early?

go for it, all my wits have started a bit below 70F and gone as far above as they want from the get-go
