That website details a super great recipe for lemon wine. It is one of my favorites. I do one thing different in that instead of adding the required wine tannin powder I add 1 tbs of black earl grey tea leaves into the primary.

you can use lemons instead of lemon juice

Google "sima". I always have a gallon jar of this going. I use whatever extra wine yeasts I have laying around.
