Hey fellow home brewers! I started my latest batch having forgotten that I would be on vacation when it was done. So far my batches have taken 8 days to be to the point where I like it. I'll be back on day 11. What is the best thing to do? I can either stop the brew on day 6 or let it go on until day 11. If I just put the whole think in the fridge on day 6 can I take it out and let it keep going for a couple days when I get back?

I'm assuming your talking about primary fermentation. If so just leave it on the yeast. You'll be fine. I usually leave mine in primary for 3 weeks
 
It will probably be a bit more tart than you are used to at 11 days vs 8, but should still be perfectly drinkable.

I disagree. At eleven days as opposed to 8 it will either be exactly the same or even better.

You should not be fermenting by time.. You should be going by gravity. It will probably be done fermenting by day eight but not necessarily.

I ferment all my beers for 2 weeks or longer. They are no different between 2 week or 4 weeks.... Some beers (darker and stronger) actually benefit from some aging.
