I turned my old mini-fridge into a temp controlled (STC-1000) fermentation chamber for my small 1 gallon batches awhile back. It worked great, and still is holding temps perfectly, but I'm getting a ton of condenstation leaking now as it cools and shuts off regularly. It is located in my attic where it gets pretty warm, so I'm sure the temp differential between the inside of the fridge and the air isn't helping.

Is there anything I can do to the fridge to avoid this?

Yep, get one of these, or something similar:

Reusable "wireless" dehumidifier

I've got one in my ferm chamber, and it works great. Prior to having one of these, there was a serious stanky crud / mold problem in there during fermentations.
