About to brew a northern brewer american wheat. I plan on adding orange peel and coriander for kind of a blue moon taste. I was thinking about adding some cascades late in the boil for aroma. My question is how long should I boil to add aroma but not raise the IBU's to much? Is it even a good idea at all?
 
I would keep the late additions some what low as guidelines state that hop aroma should be low to moderate. With that being said its home brewing so go for it if you would like. If your looking to get aroma only without increasing the IBUs then you will want to add them as late as possible. I would suggest adding at 5 to zero minutes before knockout. If your using an immersion chiller, I'd drop in your sanitized chiller in the wort and drop in the hops and stir. This will help to cool the liquid faster and the whirlpool method will increase the hop aroma that carriers through. You could also consider dry hopping for aroma.

Yeah I knew it wasn't typical for an American wheat but I m really brewing this for my wife who loves wheats. The hop aroma was going to be for for me! Think I'll throw them in at the end off the boil and see what happens. Thanks for the advice
 
I think that the Cascades hops will have so much aroma that you won't even notice the orange and coriander. You might want to consider a hop that has less aroma?
 
I'm all about hop stands. However, hop stands do extract more resin and hop flavor which you may not want in a wheat if you're going for a blue moon type beer. Its just an alternative to your typical flame out additions.
