I'm making a rasberry wheat beer and was going to try a late addition of my LME. My question is should i add the other half of my LME 20 minutes before the end of the boil and then bring back to a boil and proceed with hop schedule; or should i complete the boil and hop schedule then add LME and let steep for 20 minutes. Clarity on this as well as hop utilization would be appreciated.

When I do a late extract addition I stop the boil and the clock resuming the clock once the boil is restarted.

When I'm splitting up my extract additions, I typically go with one at the start of the boil (i.e., bring to boil, remove from heat, add extract, stir to the point of frustration, bring up to boil again, start clock) and the second at flameout. I brew on the stovetop, so this saves me the hassle of having to get it back up to a boil all over again.

One thing to remember is that hop utilization will increase with this method, but so long as you're aware of it (and depending on the amount of extract in question, it could very well be a negligible difference), you can plan for it.

I'm counting on the hop utilization going up! I put all 3lbs of DME into the boil,25mins or so total. Did 3 hop additions (20,10,FO10),then added cooper's LME can. OG was 1.046,so all systems go at the moment with initial ferment completed. I figured that doing the hop additions this way would give a better perceived balance of hop/malt flavors at 3 weeks in the bottles.
