late edition dme?

I put together some ingredients that includes 7 lbs. of DME. In the past I've used kits that utilize LME. My final product has always smelled and tasted like molasses. After reading some threads I've come to the assumption that it is due to the caramelization of the LME during the boil.

I plan on doing a late edition with my DME. My question is... how much do put in to start? When do i make my late edition and when?

My plan is ... 3lbs at the beginning.
4 lbs with @ 15 min.

Any suggestions or criticism is welcome.
 
For my average to mid gravity ales,I put half of a 3lb bag of plain DME in a 2.5-3G boil for hop additions. I then add the remaining DME & all the LME at flame out. Cleaner flavor & lighter color that way.
 
I like to use about 1 pound of extract per gallon of water in the boil. So, for a 2.5 gallon boil, I'd use 2-2.5 pounds (guestimating is fine! No need to be too precise).

If it's all LME and not DME, I'd put the vast majority of the extract at flame out or thereabouts.
 
So,yooper,you're saying I/we could just dump in 3/4's of a 3lb bag of DME to do hop additions & still get good hop utilization in a partial boil? I've been using half the bag,or 1.5 pounds in about 2.5G by the time it finally boils.

Sure, that would work. But 1/2 bag would work too!
 
Ok,thanks. I figured in a partial boil that size,1.5lb of DME would work well. I get good hop flavors vs malt profile so far. I was wondering if more DME in the boil would be better,so you answered that question.:mug:
 
so if i'm reading this properly, you guys use any where from 1/2 to 3/4 of a 3 lb bag of dme and get good results. i'll try to stay in that range. i feel good about that! thanks again!
 
Thank you for a good thread! At least I'm doing something right. I may just buy that book on yeasts & study that. I'm getting to the point where somethings gotta give with the fermentation aspects of my process.
It'sok so far,but certain aspects of it have been brought to my attention since I started on this adventure of the old Burton ales.
All thanks to a PM from revvy that started this latest adventure. It's def gunna help me learn the next step in this adventure called home brewing...not to mention,yooper's intersessions. :mug:
 
its funny that you say that. i'm actually going to start experimenting with different yeast varieties soon.
