Late addition of lme and or dme

Good Morning,
Today I am going to brew a NB Caribou Slobber Extract kit. I will be using 1# of Briess Sparkling Amber DME and 6# of Mallards Amber Malt LME I will also only be boiling 3 Gal. and topping off to make 5 Gal.

How much LME and or DME do I need to add after steeping my grain?

General rule of thumb is to add one pound per gallon at the beginning of the boil. The wort will be about 1.048 SG, or there abouts, for optimum use of the bittering hops.
 
I'd add the pound of DME & no more than 2lbs of the LME. Add the remaining extract @ flame out while still boiling hot.
 
Can someone explain the reason for a late addition of LME or DME? I've been doing full 60 min boils with both......
 
it keeps it from darking as much. I have been doing about 25% of my LME at boil and rest at flame out with really good success. Here is a pic of a blonde ale I did, I use 1 clear bottle per batch to see how it is carbing. :tank:

Ok. Good to know. Good idea to use clear for one....
 
Also hop utilization is better when the gravity isn't so high. If you added all the malt extract with a partial boil, the gravity would be super high before watering back.

I'm new so I want to clarify. You are saying that adding Dme or LME later gets more hop taste?

If so that is helpful to know as I love hops :)
 
AFAIK it primarily has to do with bittering, and the way Alpha Acids isomerize, but it wouldn't surprise me if other aspects of flavor and aroma were compromised as well. I'm no scientist, unfortunately.
 
More of the alpha acids get isomerized in a -partial boil when the gravity isn't real high. So effectively speaking, the hops do a better job in lighter wort of 1.040 or so versus adding all the extract at once in a 2 1/2 to 3 1/2 gallon boil. I do 3 1/2 gallon boils, regardless of AE or pb/pm biab or E/SG. So the hops listed in recipes or kits come out great/as intended when topped off in the fermenter & finished. Having said all that, I also found that the hop additions have a bit more edge to them when added loose to the boil versus in a bag. They get strained out going into the fermenter anyway, so any imagined losses in the brewing method are regained somewhat by the fuller effects of the loose hops.
