Greeting!

I jumped into making mead, Cyser to be exact. My basement science project as I call it was alot of fun! I researched as much as I could & liked this site overall for the helpful members. Very fortunate as I just priced everything out and was ready to buy, when I happened to stop at a yard sale and saw a table with an entire home brew setup, unused. I couldn't get to my wallet fast enough when he said $30 takes it all.

I made my first batch in January with fresh Apple Cider from a local orchard, no preservatives, (which started to ferment before I got it in the carboy...). I did not get the specific gravity for a few days as it foamed up like crazy on the start, & the calculations from the reading I did get a few days later puts it at 13.5% ABV.

I let it complete fermentation on it's own, and 9 months down the road I notice that it has a very good taste, however there is a strong alcohol note to it. I did experiment with a bottle, adding 60 ML of honey to see if it would help- it did a little.

Any suggestions on how can I mellow out that strong alcohol bite??
