Anyone had any luck using a lager yeast and fermenting at Lager temps? Just curious if I would produce a crisper and clearer result. cheers!
 
I've used a number of lager yeasts at lowish temps (55F) but not quite at lager temps. Of the lager's I've tried, I like Fermentis S23 the best. However the lager yeasts are really difficult to stop with cold crashing and once they ferment all the way out are not all that great. If you stop it at 1.004 to 1.010, keep it cold and drink it fast, or else pasteurise, it will be really good.

Or ferment all the way out and have a dry cider.
