Hi i got throwin in the deep end with my first All grain beer. A local micro-brewery gave me the grains and hops but had no good ale yeast at the time so gave me 2L of yeast cake white labs (unknown strain) from a vienna lager he had going. So i set up my fridge with a termostat and set it to 10. he said alsong as it stays under 17 you will get no off flavours. I raised it up to 15-16 3/4 through and have since brought it down to 7-8 its been 14 days since pitching 1 cup of yeast and the brews been at FG for about 7 days. The beer tastes awsome and i was thinking of just bottling now what do you think?? Oh it the Haus Pale Ale recipe using Saaz-B hops and roasted barley insead of vienna. It tastes almost to good to be true very clean and well balanced.

you can lager it around 2-4 deg for awhile or ya...bottle'er up.
Lagering tends to mellow it out a bit
