I made a 1L starter of Omega lacto about two weeks ago. It started out like most lacto starters I have done. Unfortunately, life and family happen and I haven’t had time to brew. It has been sitting on the kitchen counter out of the way with sanitized foil on top.

A few days ago it started showing signs of vigorous activity with a small krausen. It is still foaming away. Anybody ever see this? Do you think I should dump it and start over?

Do not dump it. Mine forms a krausen. I know it should not (apparantly) but mine is over 2 years old and sours perfectly. I keep mine in a 2l pet bottle and top up with fresh wort after each use. At first i thought i was contaminated like you as I have other lacto that does not do same but the beer comes out great. If it smells ok it should be good.
