It's around 80 degrees in my garage. Is temperature control important after your Kolsch has fermented and been in secondary at 40 degrees (I short-changed secondary, and only did three weeks - next week and weekend are looking really busy).

Anyway, do I need to try to keep the Kolsch down to 70 degrees when carbonating? Or is it okay to let it reach the low 80's? Trying to decide if I should put the bottle in a picnic cooler with a little ice and watch the temps.

I would keep it as cold as possible. Lighter beers don't have a lot of flavor to cover up mishandling.
