Brewed my first beer Friday.,....Kolsch Brewers Best Kit. Nottingham Yeast.

Bubbling like crazy.....in fermenter.

Anyway:

Should I leave in Fermenter for 2 or 3 weeks before bottling (I know I have gto check SG and will do)

How about a stout that I pla n on doing? 4 weeks in fermenter?

I am trying to plan my brew sessions :)

I am gonna need many more fermenting Carboy's or buckets to keep up with my schedule! :mug:
 
Don't rush a Kolsch (or any beer for that matter). If you're not sure, go buy a new fermenter. Good to have more around anyway, keep more things in the pipeline.

When you have really active primary fermentations, I'm sure you know about blow-off tubes, and also to watch the temperature more closely.

Anyway:

Nothing substitutes for a hydrometer. However, with an active fermentation, I would personally plan on moving it to secondary after two weeks or so... I would never bottle it without confirmatory hydrometer readings, but I would be less worried about the density if I were doing a secondary.

Do you have a bottling bucket? They are super handy, and if you plan properly you can go ahead and age beer (or even ferment beer) in your bottling bucket. I've heard it said that you should age dark beers longer, but I really wouldn't know... I've only ever brewed one batch of beer.

I am definately going to go out and buy....ummm....probably (2) more fermenters for now....

On the Kolsch I was thinking this...as a guidline:

3 weeks in Primary (no secondary)
- Check the SG of course at the 3 week mark
3 weeks in bottles at 70F for carbonation
2 weeks in fridge before drinking
- 48 hours until I try JUST one
- Then I am going to try at 1 week, 2 weeks, 3 weeks, etc...and make note of taste, etc. to show myself the effects of letting it set in the bottle.

On the stout...I am having hard time finding how long I should leave on primary (no secondary for me)....i have seen 3 weeks and 4 weeks mentioned in threads....so I am thinking 4 weeks?

Now...my first ever brew was the Kolsch....next is a Stout....so now I have to decide on what my third batch will be.......

Decisions decisions......
 
I do have a bottling bucket.

The Kolsch was in a kit and did not come wiht Kolsch Yeast....the fermentation was raging pretty good....and I have a standard air lock....no problems so far.....

My Primary is the bucket type of fermenter you get in a kit.
