So I'm doing my 1st sour so is this correct

Just heat my LME enough to dissolve it take it off pitch my bugs at 95°F in the kettle add the lid and some plastic wrap around the kettle an let sour for 2 days

Thing bring to a boil add my hops and then pitch my regular yeast in fermenter.

Also I wanna make a carrot cake sour so i bought half gallon of 100% carrot juice. Would you add that after 2-3 of fermentation?

Also wanna add some lactose brown sugar and spices when would be a good time to add them? In 5 mins?

Hmm... sour carrot cake. I just can’t imagine what that would taste like. But good luck with it anyway.
