After a few weeks in the keg the IPA I brewed is starting to lose it's bitterness? Has anyone else experienced this? Also, I serve the beer at about 8 psi and the beer is losing its carb? Not sure if it matters but I make smaller 3 gal batches. Thanks!
 
Well, at 8 psi it might be a bit low on carbonation. My fridge is 40 degrees, and I keep my regulator at 12 psi. Here's a carb chart to find what's perfect for you: http://ebrew.com/primarynews/ct_carbonation_chart.htm

Unfortunately with IPAs, the hops aroma and flavor does fade quite a bit with time. Usually within a month, the beer has changed quite a bit. Well, to be fair, IPAs don't usually last a month at my house so I'm not sure I ever had one that was a month old. But definitely within a month, I'm glad I drank the whole keg before the hops aroma and flavor faded more.
 
yeah mine die off rather quickly. you could probably perk it up again by throwing some hops in the keg? i've never tried it.
 
What if you bottled them, would they keep longer? What about the losing carb issue? Thanks!
