Hi all, I'm on my 5th batch of homebrew and decided to get a little ambitious, trying to replicate the Founders KBS. I can't get it in WA so I figured why not try to make my own. I followed an extract recipe from Zymurgy exactly and made sure to sanitize all my equipment with star-San very well (the ingredients were Fing expensive so I didn't want to screw this up). I got an OG of roughly 1.065 and pitched Wyeast 1056 after letting the pack do it's thing. I'm guessing my OG is low for a beer like this.....my yeast also seemed to slow down quickly after about 2 days and little to no Krausen. Gravity reading after 1 week shows about 1.035-6ish. Is this goid or bad? If anyone has experience with this I would love to know more! Thanks
 
You should have made a stater. I think the og is lower than it should have been. What was your mash temp?

You could wait a week and see what happens or toss another packet of yeast in there. Pretty sure you under pitched. Check yeastcalculator.com to verify.
 
I probky should have done a starter, mashed grains at 155F for 45 minutes then added my extracts, full boil for an hour. Added chocolate and cocoa nibs and coffee per instructions. I seem to always get a little lower OG when I brew than what I should, not sure why....I follow all instructions, maybe push the boil longer?
