I am going to attempt a König Ludwig Weissbier Clone. I am currently enthralled by this beer as it is a very flavorful and refreshing authentic Bavarian Hefeweizen. I have brewed the recipe below with Wyeast 3056 but this time I am going to culture yeast from König Ludwig bottles in order to try and duplicate its unique and yummy yeast character. The batch I brewed with Wyeast 3056 was highly successful. I will post an update after I taste the finished beer. :mug:

Mash Guidelines
Amount Description Type Temp Time
12.8 qt Infusion 152 F 60 min

For a more notable crisp malt character, a Decoction mash may be recommended instead. For simplicity, I am going to just do an infusion mash on this first attempt.

How did this turn out?

I love this beer on draft, but the poorly-kept bottles at Total Wine were a bit flat. I imagine it would be amazing as fresh homebrew.
