My Belgian Tripel: Good head (gotta love that), good taste (a little raw I thing). I read in another thread that this may take months to really come into it's own. Does it really? This recipe had a bit of fermentables, so I guess it would take time.

3.3 lbs. Amber LME
3.3 lbs. Light LME
3 lbs. Pilsen DME
1 lbs. Belgian clear candy sugar
8 oz. Maltodextrin
1 lb aromatic malt (steeped)

I love home brew!
 
Very nice. Kudos for starting out with what can be a very difficult beer to do well. However, yes, as hard as it might be - put some of those bottles aside for a few months and pull them out 3, 6, or 12 months down the road and see what they taste like. You might be very surprised. The trippel I did in May was far better in the fall than it was in June. (And I still have some bottles stashed to try.)
