The only explanation for this question would be that I must have been in a coma for a protracted time, but here goes anyway: what the heck is Pacman yeast? And what is the big deal about it? Why does it seem to only be available for a short time?
 
It is the special house strain of yeast from Rogue breweries out of Newport, Oregon. Wyeast is running 'limited edition' yeast strains right now from various different sources. Flying Dog yeast is being sold right now, among others.
 
Mine seems to be doing a kick ass job on my IPA right now. It's been fermenting for a week at 60 degrees and just now starting to slow down. I dig it, good thing I have a few more packs of it:D

It lives up to its name, as it eat sugars like mad! I still have 4 packs left.
 
Pacman can hit >80% attenuation, which means the residual malts lean towards the very long chains. Makes for an unusual profile.
 
I just snagged a taste of my IPA that used Summit hops and pacman. Initial impressions: WOW! Best IPA I've had to date. OG was 1.067 and the reading I took was 1.019. It has a smooth bitterness, a caramel sweetness, but not much aroma (I forgot to add the .5 oz of aroma at flameout:drunk: ) but that will change with my dryhop of 2 oz of cascade. If it's this good a week in, I can't imagine what it will be doing at 3 weeks:rockin: .
