I just bottled my first batch, which is the "Everyday IPA" from Brooklyn Brew Shop. The beer in my fermenter was slightly below the "One Gallon" mark, so I put only 2-2/3 tablespoons in my pot instead of 3, which the recipe told me to do. I accidentally got some yeast in my pot, so I only wound up bottling 6 12oz bottles. I understand that I left 1 or 2 bottles worth of beer in the pot.

In short: I think I used an amount of honey for nine beers, which only mixed with about seven. I also accidentally poured some sanitizer into my beer before bottling. Am I at risk of having my bottles explode? If so, what should I do and when?
 
hmmm.....
First, You may have over carbonated but not much. Put the beers a bucket in case they crack and leak.
Second, the sanitizer you used is important. In some cases you've ruined the beer (iodine or the pink stuff). If it's diversol, DON'T drink them. In some other cases, no problem. Tell everyone what you used... please!
Third, where do you get the patience to do a 1 gallon batch?! Having patience will make you an excellent brewer. But you may be insulting the beer gods but making so little at a time- hence the string of misfortune.
A TIP- read over your brew plan, create a bullet list of steps, and check them off before continuing.
 
Thanks, I was afraid of some kind of dangerous explosion. I used Starsan for sanitizer. I bought Brooklyn Brew Shop's kit, which is used for one-gallon batches, to practice with until I get better.
 
The Starsan won't poison you - you're fine. You may be a little over-carbonated but I doubt it's anywhere near the range for bottle bombs.
 
Starsan is probably the best possible answer that I know of. It is made as a "no rinse" sanitizer so good good good.
 
Regarding the over carbonation issue:

It sounds like you had 9 bottles' worth of beer in your pot. Then you put sugar in the pot. Then you bottled the first 6, and left the last few in the pot. It this is correct, you did NOT overcarb. At least it was no different than if you had bottled them all. Keep in mind, once it goes in the pot, it gets pretty evenly mixed. So you could bottle one or all of the beers, that doesn't make them overcarbed. Or maybe I'm misunderstanding what you described. If so, ignore me.

Regarding starsan: no worries, drink 'em.
 
I started with that kit a year ago. Love BBS. Whenever I see them brought up in a thread, I gravitate toward it!

Anyway- I know they recommend two weeks for fermentation, but i think that's too soon.
How long did you let it ferment?

Just point it away from your face when opening it, unless you want the bottle cap "teeth" perfectly marked on your chin. If happened to me once. LOL
