I had recently brewed up several Mr Beer kits I bought from a garage sale. I tossed the booster and brought the ABV to 5-5.3% with DME, added hops in a short 15-20 min boil for flavoring/aroma, and used US-05 that I calculated how much to pitch by the gal as I made 1 a 2.5 gal batch and the other two I made into 1.8 gal batches. This ended up being 6.1 gals. I just did a dry pitch - no rehydrating.

Is this enough of an under pitch to even give it any off flavors? And if so what flavor would it likely give them?
 
It looks to be on the upper edge of ok based on batch size and anticipated abv. I would be more worried about off flavors from lack of temp control through the early stages of the fermentation process. There is a ton of info around here about this and similar issues if you do a bit of googling.
 
Actually I am worried about off flavors due to poor temp control.

I forgot that brewing a bunch of beer wasn't a good idea because it was hard to manage 3 tubs of water with the amount of frozen bottles I have. I did fair through most of the time, but it did get around 70* at one time during the first 3 weeks. It was usually as low as 63* and as high as 68*.

I've given them a little extra time for fermentation in hopes that it mat help with any created off flavors. I'm generally much better at keeping an eye on the temps, but it's far easier with only 2.
 
It is generally accepted that strict temp control is only needed during the first few days of fermentation (reproduction phase if I remember right). After the first few days the temp becomes a lot less of an issue. It sounds as though your beer will turn our just fine. ~Cheers
