So roughly a month ago I purchased a bottle of raw Kombucha and thought that I could make Jun with it. I used Bancha green tea, raw honey from Zacatecas, Mexico(had a lot of what I can only assume to be pollen in there), and boiled filtered water in a gallon jar. I added roughly 1/4 cup of the raw, flavored, kombucha in it after it came down to a warm but not hot temperature. I put a coffee filter over the top with the screw on lid to let air in, the temp was more or less 80's and 70's range for about a month and the S.C.O.B.Y. formed thereafter; I agitated it on a regular basis. Currently the mixture is still quite sweet, slightly tart, and with little to no activity in terms of carbonation. I don't know if it's dead, dormant, or even what I am doing. Thoughts and suggestions?
