This is one of my favorite styles, and I'll finally have the capacity to brew once we move next month. This beer is vastly different than anything I've tried before so I'm looking for some feedback. I'm debating back and forth between using the crystal malt or reducing the first runnings to a syrup and adding to the boil.

Please let me know what you think!

Carnegie's Wee:

3 gal
OG: 1.101
FG: 1.026 (think this might drop lower)
ABV: 10.1%
IBU: 30.4
SRM: 25.4

11.25 lb Mariss Otter
.5 lb crystal 60
.5 lb crystal 120
.25 lb biscuit
.125 lb black
.125 lb roasted barley

Mash at 156

.7 oz Target @60

60 minute boil

Ferment at 68 with Wyeast 1728 - Scottish ale.

Bottle condition a rest for a *long* time.

I like your recipe.
That is similar to one I made.

I used Golden Promise, flaked barley, Carapils instead of Biscuit and no Black.
I did a 3 week Primary, 1 month secondary, and had it in the keg for 3 weeks before tapping.

I hopped with Northern Brewer and used WLP028 Edinburgh Ale. Montgomery Scott's Wee Heavy.

It was great. RIP
 
Interesting - I've been toying with using golden promise instead of the mariss otter. What difference do you think the golden promise would make?
 
I am not sure of the difference but I read that Golden Promise is a Scottish Malt and I was going for the Scottish theme. Hence the Edinburgh Yeast and the name.

From Farmhouse Brewing Supply:
2º-3º L
Golden Promise is a traditional Pale Ale Malt grown in Scotland. It produces
sweet, mellow wort and is excellent for both brewing and distilling.

BTW mine finished at 10% ABV - Two pints a night = good! Three pints made the next morning rough!
 
I love golden promise as a base malt in Scotch Ales. Actually, its one of my favorite base malts regardless of style. Note that Golden Promise is the malt used to make Glenfiddich.

I also a touch of smoked malt to my Wee Heavy. Good stuff. 2 oz per 5 gallons will be just barely noticeable, but still there.
 
I'd drop the black malt as well, but keep things the same otherwise. Maris Otter and Golden Promise are both great malts and well liked, so you can't really go wrong in either case.

I'd also ferment cooler than 68. You can let this yeast go in the mid to upper 50s and it's still happy to do the work. I'd shoot for 60 as a compromise. Raise that temp as things slow down at the end, and it'll finish up without taking a month to do so.
