copper from what I've read is a no no post fermentation, but it also seems to be a big debate around here too so I'll just leave it at that. aluminum would probly do you decent, but I'm not sure about flavors that it may impart upon your fine brew. will wait to hear what the expert metallurgists here have to say about the thermal conductivity and the reactivity with an acidic liquid for your options.
 
All jockey boxes use SS. Even the aluminum cold plates are SS tubing inside.
I see jockey boxes on craigslist for cheap. There was a huge pile of cold plates at the scrapyard a few months ago. I couldn't take them and it makes me sad to thing they got crushed.
Stainless is cheaper by the lb than copper right now.
