Man, I wish I could get a bottle of that in Oregon. Looks great.

I just kegged mine. The recipe I posted above is what I used. The sample tasted OH SO GOOD. The hop flavor is fantastic. I'm really looking forward to tasting it when it's carbonated. Here's a pic of the sample. I'll post another one once it's carbonated and everything has settled out.

Well, I boost carbed from Wednesday afternoon to Friday afternoon. This beer is only 2 weeks old and I've already had 5 pints of it. I can't help myself, it really is THAT GOOD. I'm glad I followed Yooper's lead and dropped the gravity a bit. This is a fantastic beer. I'm liking the Centennial and Citra combo too.

I will be attempting to brew this on Saturday. It will be my second all grain batch, lets hope for a better efficiency.

I made an extract version of this beer back in '09 and it was the best extract beer I ever made. Like, "I can't believe I made this" good. My bottles went quick. When I made it a second time I screwed up and used 3 month old munich syrup I stored duck taped shut in the fridge. Well, that didn't work and the syrup likely went stale and I likely scorched some of it in the boil on top of it. Beer tasted like hoppy burnt hard candy. Ended up dumping most of it (and used a little in some chili)....

Been all grain since 2010 but never got back to brewing this one. After drinking Lagunitas Imperial Red last weekend (and after this season's Great Lakes Nosferatu didn't seem as awesome as I had remembered it) I got the itch to give this one a go again. Ordered everything I needed for it last night. Sticking with Columbus, Centennial, Cascade. Hopefully brewing it one of these next few weeks. Fantastic beer. Hopefully 2 out of 3 ain't bad.

Brewed this on Saturday, it was my second all grain batch. Efficiency was 66% which I will take. Color looked amazing and came it at OG 1.071. Used Pacman yeast can't wait until its done.

Super aggressive fermentation from the Pacman!!! Might be close to being complete!!! Can't wait to have this on tap along with Yoopers 60 min IPA!!!

Yooper or anyone have thoughts on using magnum, cascade or chinook instead?

comments appreciated.

on 2nd thought might need to tweak grain bill for those flavored hops.

I love chocolate malt in my porters and stouts, but from my experience anything over 2 ounces will definately darken the color of my beer.

I brewed this again today. Or, something very very similar anyway.

10 gallon batch
OG 1.062
IBUs: 56

20 lbs Pale Malt, Maris Otter (3.0 SRM)
2 lbs Weyermann Munich malt
1 lbs 8.0 oz Caramel/Crystal Malt - 40L
12.0 oz Caramel/Crystal Malt -120L
12.0 oz Biscuit malt
2.0 oz Chocolate (Crisp)
2.0 oz Fawcett pale chocolate

2.00 oz Centennial [11.90 %] - Boil 20.0 min Hop 12 24.9 IBUs
2.00 oz Amarillo [9.50 %] - Boil 15.0 min Hop 13 14.8 IBUs
2.00 oz Amarillo [9.50 %] - Boil 10.0 min Hop 14 11.9 IBUs
1.00 oz Centennial [11.90 %] - Boil 5.0 min Hop 15 4.1 IBUs
2.00 oz Amarillo [9.50 %] - Boil 0.0 min Hop 16 0.0 IBUs

Oh, my goodness did I have a LOT of hops in the wort. The amarillo are all 2012 leaf hops, and they sure smelled great.

I used S05 in one fermenter, and WLP001 in the other.

um, am I missing something: no bittering hops? (Is that what hop bursting means?) How long do you boil it?

Yooper how'd this batch turn out? What was learned between the 2 variations?

Yooper,

How did this revised recipe come out? I want to brew something between Jamil's Original Evil Twin recipe and this, I am wondering how the color came out on this. I really want a copper/amber color, trying to avoid going as dark as an american brown.

I'm sure that this got drunk a long time ago, but any comments would be great!

Thank You

It was really good, but I wasn't wild about the color. It was more of a brownish than red, so for the next one I reduced the dark malt a bit more.

The last version I did was this one (this is 10 gallons, so everything is doubled!):

20 lbs Pale Malt, Maris Otter (3.0 SRM) Grain 5 79.2 %
2 lbs Munich Malt (9.0 SRM) Grain 6 7.9 %
1 lbs 8.0 oz Caramel/Crystal Malt - 40L (40.0 SRM) Grain 7 5.9 %
12.0 oz Caramel/Crystal Malt -120L (120.0 SRM) Grain 8 3.0 %
12.0 oz Victory Malt (25.0 SRM) Grain 9 3.0 %
2.0 oz Chocolate (Crisp) (630.0 SRM) Grain 10 0.5 %
2.0 oz Chocolate Malt (pale) (225.0 SRM) Grain 11 0.5 %

2.00 oz Centennial [11.90 %] - Boil 20.0 min Hop 12 24.9 IBUs
2.00 oz Amarillo [9.50 %] - Boil 15.0 min Hop 13 14.8 IBUs
2.00 oz Amarillo [9.50 %] - Boil 10.0 min Hop 14 11.9 IBUs
1.00 oz Centennial [11.90 %] - Boil 5.0 min Hop 15 4.1 IBUs
2.00 oz Amarillo [9.50 %] - Boil 0.0 min Hop 16 0.0 IBUs

the flavor was great but I still wasn't wild about the color. I think next time I'll just go with the pale chocolate and see if that's what I want, and maybe add carared instead of all of the crystal 40L.

What do you think about reducing the C-40 and C-120 a bit, dropping the chocolate altogether and maybe using 2-4 oz of pale chocolate?

Do you use beersmith? I do and feel like some recipes are spot on for color calculations and others turn out darker than expected. I brew all my batches on the same equipment and use pretty much the same process so I don't think it is inconsistencies there.

Thanks for the feedback! I plan to brew this next weekend and am really looking forward to it.

The color isnt' really too dark (yes, I use Beersmith), but it's brown-er. It's brown in color, and I'd rather have it red/copper. That's why I'd cut the crystal 40, and replace with some cara-red and then use pale chocolate for a bit of color next time.
