This is a variation of my Bananas Foster that turned out really well.
A few over-ripe peaches, peeled and sliced
Equal parts butter, brown sugar, Jack Daniel's (about 3 Tbsp each)
Fresh whipped cream
Fresh nutmeg
Melt butter in a large pan over medium to medium-high heat. Add brown sugar and peaches. Stir until brown sugar is dissolved and begins to bubble. Add Jack Daniel's, and (optionally) flambé. Cook off the alcohol and allow the caramel to thicken slightly. Remove from heat and top with whipped cream (mine was very slightly sweetened since the sauce is very rich). Grate nutmeg over the entire dish.
I paired it with a Great Divide Oak Aged Yeti Imperial Stout. It was a pretty sharp counterpoint to the sweet peaches, but the oak played well with the whiskey.
