I've been following Palmer's book and it says to put the malt in cold water. How big of a deal is it to use warm water, say 80 degrees Fahrenheit?
 
I'm not sure what you mean. If you're talking about adding grain to the water for steeping, you can do it at any temperature. If you're talking about malt extract, that's generally added at boiling. (Take it off the heat first).

If you're talking about mashing, adding grain to the water for mashing, that's usually done at about 165 degrees, since mashing temperature is usually 152-154.

I am pretty sure what the cold war part that was mentioned in Palmer's book was when adding dried malt extract and it's MUCH easier to add that way. It doesn't clump up. Room temp water is fine too.

Liquid dissolves much easier in warm.
