EDIT: Decided to try no sparge first, redid steps

Ok doing my first all grain, and want to try the BIAB method.
I want to do the cream of 3 crop recipe, but it makes 11.5gal batch so i tried reducing it.
Original Recipe: https://www.homebrewtalk.com/f62/cream-three-crops-cream-ale-66503/

Recipe Type: All Grain
Yeast: Safale - 05
Yeast Starter: Prior Slurry
Batch Size (Gallons): 11.5
Original Gravity: 1.040
Final Gravity: 1.005
IBU: 14.3
Boiling Time (Minutes): 90
Color: 2.9
Primary Fermentation (# of Days & Temp): 14 Days at 68 Degrees
Additional Fermentation: Kegged and chilled for 10 days
Batch Size: 11.50 gal
Boil Size: 14.26 gal
Estimated OG: 1.040 SG
Estimated Color: 2.9 SRM
Estimated IBU: 14.3 IBU
Brewhouse Efficiency: 75.0 %
Boil Time: 90 Minutes @152 degrees

Ingredients:
------------
12.00 lb Pale Malt (2 Row) US (2.0 SRM)
4.00 lb Corn, Flaked (1.3 SRM)
1.00 lb Minute Rice (1.0 SRM)

1.00 oz Williamette [5.20%] (60 min)
1.00 oz Crystal [3.50%] (60 min)

My guess:

same yeast (one packet?) and all the same steps (how do i find estimated OG?)
with
5.5lb pale malt 2 row
2lb corn flaked
.5lb minute rice
.5oz williamette 60min
.5oz crystal 60min

This is my step by step, is this right?

used a calculator to get 7.5gallon starting. Fill pot with 7.5 gallons and bring to 160 degrees (after add grain target at 152degrees)

take it off heat and cover with blankets and let sit for 90 minuites (according to one tutorial, but ive seen many different times)

bring up to right under 170 degrees then take out grains

start normal 90min boil according to recipe

does this look right?

also, i have a few more questions
2. whats the deal about adding cold water after a boil, is this just if i have less than 5 gallons of wort to bring me to my target batch size?

So you are doing a half batch? First thing you need to know is your efficiency. then you can come up with your grain bill. Not sure where you got the 30 min from but change that to 60 min. What is your boil off rate? that will tell you how much pre boil volume you need.
I am not trying to be a ass but the more time I read your post you are not even close to be ready for this. Take some time and keep reading all the info you seek is out there.;) Keep asking the ? and we will all help you make a great beer.

haha i know im not ready thats why i was trying to get this stamped out. Ive seen like three different versions of the BIAB method (some with two pots some without) so im confused as to which was correct.
something occured to me, is the boil time (90 min) start before or after you do the strike and sparge part?

i didnt realize there was a sparge and a no sparge version of BIAB. that is what was confusing me. I decided to try out no sparge first so i redid the steps

no sparge you need more grains. The best way for biab is the 2 pot method. I think we need to get you back to step one and work through the whole process.

how much more grains?

i like the no sparge version for a few batches to ease my way in to all grain

This recipe is very forgiving so I'd not worry too much.

Cut amounts in half and go.

Bring your strike water to temp. and add the grains to the bag. Wrap the pot in a blanket and leave it for 90 minutes. Remove the grain bag and bring the wort to a boil. Add hops. Chill. Pitch yeast.

My last CoC used all Amarillo and was really good. I think I'm doing it tonight as my Farewell to 2011 brew but not sure which hops I'll use this time.
