OK just got the beer into keg, I am currently at 20psi, and plan on letting it sit at that for a about 2 days, then adjusting the carbonation from there.

Question 1 - If you plan on the set it forget it technique, would you just leave the beer at about 10-12 psi for a a week?

Question 2 - Has anyone connected the gas to the out side, so that it goes to the bottome of the keg and has more contact with the beer since the dip tube goes all the way to the bottom? I read on another website that this one guy does, this.
 
Yep, you'd def have to use a liquid QD and not the gas QD.

The beer needs to be cold...those pressures are temperature dependant. Here's a handy table if you don't already have one.

Also, if you force carb (whether it be slow or fast) the beer will be noticably better a week after it's fully carbed...then better a week after that...then better a week after that...you get the idea. Try to be patient and let the beer get really good. It kinda sucks when the keg runs out just as it's getting real good.:D
 
I'm working with a Beve Hefe, what I"ve looked at tells me to hit it with 32psi at 50f which is what I am going to pull it up to today. Now the only thing I am unsure of is how long to leave it at 32 to 30 psi?
 
Actually the liquid side will accept the gas QD, and then it will be extremely hard to get off.

Nothing stopping you from connecting gas line to a liquid QD though. Anecdotal experience suggests this works nearly as well as shaking while filling the head space.
